  • Not all heroes wear capes, and not all malts and grains have enzymes. Ensure you have enough diastatic power to convert those starches into fermentable sugars for your yeast.
  • Taste your fermentables! If it doesn't taste good, don't use it.
  • For non-grain-based fermentables, the flavours are sugar bound. This means that much of the flavour can be lost once it ferments. Items like honey, molasses and maple syrup are best added late into fermentation.
